Buckwheat Pancakes

This delicious recipe is perfect for a breakfast treat. The recipe was originally from the BBC called Fluffy American Pancakes however I have edited it to make it my own. I love making this for breakfast on a Saturday or Sunday. You can pick whatever toppings you want, my favourite is almond butter, banana and maple syrup.
Ingredients:
  • 70g buckwheat flour
  • 65g plain flour
  • 1tsp baking powder
  • 0.25 tbsp caster sugar
  • 130ml milk
  • 1 medium egg (beaten)
  • (optional) 2 tbsp melted butter (if you don’t do this you may need to add a splash more milk)

Method:

  • First, sift the buckwheat flour, plain flour, baking powder & caster sugar together into a bowl.
  • In a separate bowl beat the egg and then add the milk (and the butter)
  • Add the egg, milk (and butter) mix into the bowl with the flour
  • Whisk the mix together until you get a smooth mix, it should ribbon but more on the liquid side.
  • Then put a small piece of butter in your pan, once heated and the butter has melted get a soup spoon (if you have one) and spoon in a small about of the batter.
  • Wait until you can see bubbles on the pancake, flip, and wait for it to rise (for this side you will just check on it a little), each side should be a light golden colour
  • Repeat the last step for the rest of the batter
