I love hummus!   It is such a flexible tasty food!  It is delicious with falafels, pitta bread, naan bread, salads or simply as a dip with raw carrots.  But there is such a big difference between homemade and shop-bought hummus and it is SO easy to make at home!  Mass-produced likely means more preservatives but when you make it at home you know exactly what’s in it!

Chickpeas, tahini and olive can usually be found in your local zero waste shop and the fresh ingredients at the local green grocer.

INGREDIENTS (SERVES 9):
Hummus
  • 1 tin of chickpeas (drained)
  • 2 1/2 tbsp  tahini
  • 2 tbsp extra virgin olive oil
  • juice of 1 lemon
  • 1 tbsp fresh finely chopped parsley
  • 2 garlic cloves  (or one extra large one) (roughly chopped)
  • hot water
Garnish
  • generous sprinkle of sumac
  • sprig of fresh parsley
METHOD:
  • In a blender add the chickpeas, tahini, lemon juice, garlic, parsley and olive oil

  • Blend until evenly combined.  If the mixture is too thick and/or simply not blending, add a splash of boiling water as needed
  • To serve, spoon the hummus into a bowl.  With the back of a clean spoon, make a swirl on top.  Drizzle over some olive oil and sprinkle with the sumac.  Garnish with a sprig of fresh parsley
