Maldon Oysters is a family run business owned by Richard and Caroline Emans which started in 1960. They manage 3,500 acres of the River Blackwater where they have restored the traditional oyster beds.
As well as buying oysters from Maldon Oysters smoked fish is also available. They buy fresh quality fish from local markets. It is then prepared using traditional methods at their in-house smoker facility. They use a mix of oak and beechwood chips in their kilns.
