Trealy Farm Charcuterie was started by James in 2004 who was inspired by his visits to his Grandmother’s farm in Northern France. James moved to Monmouthshire in 2001 and soon afterwards started experimenting with charcuterie. He learned many different methods of curing, fermenting and smoking from his travels around Europe and now James and his team have created a variety of products including Fennel Salami, Spicy Smoked Paprika Chorizo, Beef Carpaccio-Style Bresaola and Semi-Dried Cured Sausages Spicy Chorizo Cooking Sausages.
