Oatcake Recipe

We love oatcakes for snacks, as an alternative to bread or as an accompaniment to cheeses.

Whilst there is a huge variety available to buy they are so quick and simple to make. Here’s our favourite basic recipe which we love plain, or with additional flavours.  We have used oats from Pimhill Farm and butter from Hollis Mead.  

Ingredients
  • 100g jumbo oats
  • 100g oatmeal (or oats briefly ground in the blender)
  • 50g porridge oats (to bring the mixture together at the end)
  • 1 tsp salt
  • 25g unsalted farm butter (melted)
  • A mug of hot water (you won’t use all of it)
Method
  • Preheat the oven to 180 degrees C/ Gas 4/ 356 F 
  • Mix the jumbo oats, oatmeal and salt in a bowl.
  • Melt the butter and pour over the oat mixture.  Stir until evenly distributed through the oats.
  • Gradually add the hot water –  pour about 1/3 of the water over the oats and stir well.  Add more hot water until the mixture is moist but not too sticky. Add the porridge oats and stir well.  The porridge oats will help bring the mixture together and forms a ball.  If a bit dry, add some more hot water but don’t make it too sticky.  

TIP:  If you do add too much water, don’t worry, just add some more porridge oats until you get a good texture).  If too dry, just add a little more hot water.

  • Turn out the ball of oat mix onto a clean, smooth surface.  Roll out until thin (no more than half a centimetre.

TIP: You shouldn’t have to flour the surface before rolling out.  If your oatcakes do stick your mixture is too wet, so add some more porridge oats)

  • Using a 5cm diameter cookie cutter, cut out your mixture
  • Place your oatcakes onto a baking tray lined with reusable  nonstick baking paper
  • Bake in the oven for 20/25 minutes.  Cool on a wire cool rack.
  • These delicious plain oatcakes are so simple to make and you really don’t need to be an expert baker to make them!

TIP: To vary the flavour try adding some finely chopped garlic and rosemary in with the dry oats.  Another great combination is chopped figs and fennel seeds.
