Spicy Sweet Potato soup

This recipe is really delicious and super easy to make. It only needs a few ingredients you will be able to find at your farm shops or grocers near your home and it will hardly take any time at all to whizz up. This is a really great lunch or light supper (although it is quite filling)
Ingredients:
  • 2 sweet potatoes
  • 1 red onion
  • 5 mini carrots
  • 5 long thin carrots (or you could use 7 medium-size regular carrots instead of the 10)
  • a sprinkle of cumin seeds
  • 1 garlic clove
  • about 1cm of hot red chilli
  • 1.3L good stock (preferably chicken stock)
Method

Heat up some olive oil in a large pan

Roughly chop up the onion and add to the heating oil. Cut the garlic clove (roughly is fine). Add the garlic to the onion and oil.

Whilst the onion, garlic and oil are heating in the pan peel and chop the sweet potato and wash and cut the carrots.

When the onion is slightly softened add the sweet potatoes and carrots. Add the cumin and the chilli (slightly chopped, you can leave the seeds if you like extra heat).

Put the lid on the pan and leave for about 7 minutes, then add the stock and let it boil away until the sweet potato and carrots are soft.

Once the potatoes and carrots are soft remove from the heat and put in a blender.

Blend until smooth.

And there you have it, super easy! Enjoy!
