This delicious recipe is perfect for a breakfast treat. The recipe was originally from the BBC called Fluffy American Pancakes however I have edited it to make it my own. I love making this for breakfast on a Saturday or Sunday. You can pick whatever toppings you want, my favourite is almond butter, banana and maple syrup.
Ingredients:
- 70g buckwheat flour
- 65g plain flour
- 1tsp baking powder
- 0.25 tbsp caster sugar
- 130ml milk
- 1 medium egg (beaten)
- (optional) 2 tbsp melted butter (if you don’t do this you may need to add a splash more milk)
Method:
- First, sift the buckwheat flour, plain flour, baking powder & caster sugar together into a bowl.
- In a separate bowl beat the egg and then add the milk (and the butter)
- Add the egg, milk (and butter) mix into the bowl with the flour
- Whisk the mix together until you get a smooth mix, it should ribbon but more on the liquid side.
- Then put a small piece of butter in your pan, once heated and the butter has melted get a soup spoon (if you have one) and spoon in a small about of the batter.
- Wait until you can see bubbles on the pancake, flip, and wait for it to rise (for this side you will just check on it a little), each side should be a light golden colour
- Repeat the last step for the rest of the batter
